A really great substitute is vinegar and baking soda! Mix together 1 tablespoon of vinegar and 1 teaspoon of baking soda together before pouring it into your batter. It makes cakes light and fluffy!

Honestly though, I never just use one egg replacer, I always mix and match. If I’m making a dense cake, I’ll use applesauce AND egg replacer. If it’s a lighter recipe, I use vinegar + baking soda and aqufaba. Replacing eggs is all about finding the right blend!

Hi,
This was a great article, thanks. I know it's not a vegan option but I have found yogurt is a great substitute. It also browns quite well. Worth a try?

My son used to be severely allergic and I had to get creative with my baking. I used the Ener-G, ground flax seed and applesauce options to differing successes. Applesauce in brownies is a great way to go! My favorite substitute is really simple for 1 egg: 2 Tbsp water, 1 Tbsp oil and 2 tsp. baking powder. I doubled or tripled to great success! I have no idea if those ingredients work for vegan foods. We were dealing with a bad allergy and baking is my happy place so I had to find something to work for us! Thanks for the great article!
